1 cup coconut flour
1 teaspoon baking powder
3 teaspoons Essential elements® Collagen Peptides
1/2 cup sugar substitute
1/2 cup sour cream
2 tablespoons instant coffee
1/2 cup almond milk
5 eggs
1 teaspoon vanilla extract
1 tablespoon butter, melted


In a mixing bowl, whisk together the coconut flour, collagen, baking powder, and sugar substitute. In a separate bowl, mix together the sour cream, instant coffee, and almond milk. Crack the eggs into the dry ingredients and pour in the vanilla & sour cream mixture. Stir to combine thoroughly. Pour into a 9x9 square cake pan and bake at 350 °F / 175 °C for 25 minutes.
